SALINA, KS — After months of anticipation, Meddy’s Mediterranean Restaurant will officially open its doors to the Salina community this Sunday, July 20, at 10:30 a.m.
Located in the heart of downtown, Meddy’s is the latest addition to the revitalization efforts backed by Salina2020, a downtown redevelopment initiative that has brought new life to the area. The restaurant brings with it a reputation for fresh, health-conscious Mediterranean fare and a fast-casual experience built around quality and affordability.
Salina311 spoke with Alex Harb, Operating Partner at Meddy’s, ahead of the grand opening. Harb shared that while the restaurant had originally aimed for an early 2025 opening, construction and planning wrapped ahead of schedule.
“Trace and Guy Walker approached me about bringing Meddy’s to Salina,” Harb said. “They’re great people with a strong vision for downtown, and I couldn’t say no. We’re excited to be here.”
The Walkers, longtime Salina developers and key figures behind Salina2020, have worked to recruit regional businesses that complement the city’s long-term growth plan. Meddy’s, with existing locations in Wichita, was a natural fit.
The menu includes a variety of Mediterranean staples:
- Bowls & Platters: Chicken Shawarma Bowl, Beef Shawarma Platter
- Classics: Falafel, Beef Kebab
- Shawarma: Chicken or Beef Shawarma Wraps
- Sides: Hummus, Baba Ghanoush
- Soups & Salads: Lentil Soup, Fattoush Salad
- Desserts: Baklava, Date Bars
Harb said the Meddy’s team is looking forward to getting involved locally and serving up their signature dishes to a new community.
Doors open at 10:30 a.m. on Sunday. The restaurant is expected to be a strong draw for both downtown workers and weekend visitors alike.
