City Commission Approves Jose Peppers' Expansion into Campbell Plaza
The Salina City Commission approved a significant expansion for the new Jose Peppers restaurant during their meeting on August 12, 2024. The decision grants the restaurant the ability to extend its dining area into Campbell Plaza, a move that will enhance the restaurant's footprint and offer additional outdoor seating for patrons.
The approved plan includes a 1,460 square foot dining area with 185 seats, along with a covered outdoor patio that will extend into the plaza. The patio, which will include 44 seats, will feature a steel structure, a natural wood ceiling, and a low brick wall. Other elements of the design include glass windows, operable sun shades, ceiling fans, and heaters, making the space usable in various weather conditions. A new entry vestibule with double doors will serve as the primary entrance to the restaurant, while the existing door will function as an emergency exit.
The expansion is part of Jose Peppers’ efforts to establish a strong presence in downtown Salina, following the closure of the previous tenant, Prickly Pear Grill, in July 2024. The council also reviewed and approved a sidewalk cafe license agreement, which allows the restaurant to operate the outdoor dining area on Campbell Plaza.
The design review board had already recommended approval of the plans, noting that the additional patio size was necessary to accommodate the required seating. The agreement with Jose Peppers runs through May 1, 2026, with provisions for annual renewals thereafter. The city retains ownership of the plaza area outside of the licensed patio, ensuring that the space remains accessible for public use.
With this approval, Jose Peppers can proceed with construction.
